भोजन बनाने सम्बंधी-नियम
  1. भोजन स्वादिष्ट बनाने के लिए यह आवश्यक है कि भोजन बनाने वाले का मन भोजन बनाने मे लगना चाहिए, तभी भोजन स्वादिष्ट बनता है।
  2. कोई भी खाद्य पदार्थ बनाने या भोजन परोसने से पहले साफ पानी से दोनो हाथ भली-भाँति धुल कर, साफ कपड़ से पोछ लेना चाहिए। एंव भोजन बनाने मे सदैव ताजे एंव स्वच्छ पानी का प्रयोग करना चाहिए। खुले रखे हुए पानी का प्रयोग नही करना चाहिए।
  3. दाल आदि बनाने से पहले उसे जल से भलीभाति धुलकर लगभग आंधे घंटे पहले पानी मे भिगोकर रख देना चाहिए। तत्पश्चात उसी जल म दाल आदि बनाना चाहिए। इससे ईधन एंव समय की बचत होती है।
  4. किसी भी अनाज या सब्जी आदि को उबालने के बाद उसके बचे हुए पानी को कभी नही फेकना चाहिए। उस पानी को आटा गूथने में प्रयोग करना चाहिए। याद रखिए भोजन के पोषक तत्व इसी पानी में रहते है। इन्ही तत्वो से भोजन स्वादिष्ट एव सुरूचिपूर्ण बनता है।
  5. भोजन बनाने मे तेल, मसाला, नमक, मिर्चा, कच्चापन या अधिक पकने का विशेष ध्यान देना चाहिए। मसाले आादि का कम से कम प्रयोग करना चाहिए। भोजन कच्चा नही रहना चाहिए। कच्चा रहने पर पाचन मे कठिनाई होती है और स्वाद भी नही रहता है। वही अधिक पक जाने पर भोजन सार हीन हो जाता है। साथ ही खाद्य के जलने का भय रहता है। भोजन पकाते समय खाद्य की पौष्टिकता बनी रहे इसका सदैव ध्यान रखना चाहिए।
  6. कोई भी खाद्य पदार्थ तलने या भूनने के लिए अच्छे से अच्छे प्रकार के तेल या घी का प्रयोग करना चाहिए। खाद्य पदार्थ के मूल्य पर ध्यान न देकर उसकी गुणवत्ता पर ध्यान देना चाहिए। पैकेट बंद खाद्य की एक्सपायरी डेट पर अवश्य ध्यान देना चाहिए। खाद्य प्रयोग योग्य है अथवा नही इससे आश्वस्त होने के बाद ही उसे प्रयोग मे लेना चाहिए।
  7. सदैव मोटे आटे एंव मोटे अनाज का प्रयोग करना चाहिए। इससे कब्ज नही रहता है। पालिश दार एंव महीन दानो के अनाजो का प्रयोग नही करना चाहिए। ये कब्जकारी एंव रोगकारी होते है।
  8. सदैव मौसमी फल एंव सब्जियो का प्रयोग करना चाहिए।
  9. फल, मेवे आदि को कभी भी आग के सम्पर्क मे नही लाना चाहिए। इन्हे कच्चा ही प्रयोग करना चाहिए। आग के सम्पर्क में आने पर इनके स्वाद और पोषकता मे कमी आती है। यदि किसी खाद्य मे मेवे आदि का मिश्रण करना है तो उसे पक जाने पर आग से नीचे उतारकर ही मिलाना चाहिए। वह खाद्य की गर्माहट से ही भलीभाँति पक जाते है और उनकी पौष्टिकता भी बनी रहती है।
  10. कोई भी व्यंजन बनाने से पहले उसमे पड़ने वाली सभी सामग्री को अलग निकालकर रख लेना चाहिए। कभी भी गर्म तेल या भाप निकलते हुए गर्म भोजन के उपर डिब्बे से सीधे मसाला आदि नही डालना चाहिए। इसे डिब्बे मे भाप प्रविष्ट कर जाती है जो ठण्डी होकर मसाले मे नमी पैदा करती है फलस्वरूप मसाले मे कीड़े पड़ जाते है।
