पाकशाला की स्वच्छता एवं रखरखाव

पाकशाला को सदैव स्वच्क्ष रखना चाहिए। इस सम्बंध में निम्नलिखित बाते ध्यान मे रखनी चाहिए–

  • भोजनालय की छत और दीवाने प्लास्टर युक्त होनी चाहिए यह सफेद या हल्के रंगों से रंगे होने चाहिए।
  • कक्ष की दीवालो पर कम से कम 5 फुट की ऊँचाई तक अच्छी क्वालिटी के टाइल या मार्बल लगे होने चाहिए। इसी प्रकार फर्श पर भी टाइल या पत्थर लगे होने चाहिए। फर्श आदि की साफ पानी से प्रतिदिन धुलाई होनी चाहिए।
  • रसोई घर की खिडकी हवादार होनी चाहिए तथा खिड़की और रौशनदान पर महीन तार की जाली लगी होनी चाहिए। ताकि मक्खी, मच्छर या अन्य कीटाणु अन्दर न आ सके। इसी प्रकार दरवाजे भी जालीदार और स्प्रिंग दार होने चाहिए ताकि वे स्वयं बंद हो सके।
  • रसोई घर मे एक छोटे पंखे की व्यवस्था होनी चाहिए। पंखा इस प्रकार होना चाहिए कि भोजन बनाने वाले को हवा लगे परन्तु गैस की आँच को हवा न लगे। एक एग्जास्ट फैन भी लगा होना चाहिए ताकि किचन मे घुटन न हो।
  • भोजनालय सीलन, जालो एवं गर्दो से रहित होने चाहिए। प्रति सप्ताह जालो आदि की सफाई करनी चाहिए।
  • कंटेनर आदि साफ रखने चाहिए। घी या तेल के कंटेनर से तेलादि निकालने के पश्चात उसके मुँह को भली-भाँति साफ करके रखना चाहिए। साफ न करने पर वह कंटेनर जहा रखा जाता है वहा नीचे चिकनाई और गंदगी जम जाती है।
  • रसोई घर के बर्तन, बर्तन स्टैण्ड, सिंक, गैस स्टोव, लाइटर, चाकू, काँटा आदि साफ सुथरे एवं चमकते हुए होने चाहिए। बर्तन धुलकर साफ सूती कपड़े से पोछकर स्टैण्ड पर लगाना चाहिए।
  • गैस सिलेण्डर साबुन से भलीभाति धुलकर साफ करके गैस स्टोव के साथ लगाना चाहिए। क्याकि सिलेण्डर पर गर्द की पर्त जमी रहती है। किचन का कपड़ा, डस्टर, वाइपर आदि बहुत ही साफ होने चाहिए।
  • डाइनिंग टेबुल एवं चेयर आदि एकदम साफ-सुथरे होने चाहिए। उनमे कही दाग, धब्बे, गड्ढा या गर्दा आदि नही होने चाहिए। हर बार भोजन करने के पश्चात मेज पर साफ गीले कपड़े से पोछा लगा देना चाहिए। यदि पोछा लगाने से आप बचना चाहते है तो मैट का प्रयोग करना चाहिए। भोजनोपरान्त मैट साफ करके रख देना चाहिए।
  • सब्जियो एव फलो को धुल कर प्रयोग मे लाना चाहिए। सदैव ताजी एवं हरी सब्जियों का प्रयोग करना चाहिए। इनके छिलको को अलग टोकरी में रखना चाहिए और पशुओं को खाने के लिए देना चाहिए। इन्हे स्लाइस के पेपर, मसाले, घी या तेल के रैपर के साथ कभी नहीे फेकना चाहिए।
  • रसोई घर में भोजन बनाने वाले या सहायक को सदैव नहाकर एंव स्वच्छ सूती कपड़े पहनकर रसोई घर मे प्रवेश करना चाहिए। महिलाओ को खुले बाल लेकर पाकशाला मे कभी प्रवेश नहीे करना चाहिए। इससे बाल भोजन में पड़ते और गंदगी फैलती है। बाल कंघी किये हुए और बंधे हुए होने चाहिए।
  • स्वच्छता पर विशेष ध्यान देना चाहिए। याद रखिये ‘’स्वच्छता स्वास्थ्य की जननी” है।
  • आपका भोजनालय इतना स्वच्छ और सुन्दर होना चाहिए कि देखने वालो का मन प्रसन्न हो जाये। कितना भी कोई थक कर आये लेकिन रसोई घर देखते ही उसकी सारी थकान दूर हो जाये और भोजन करने इच्छा उसमे उत्पन्न हो। इस प्रकार अपने रसोई घर को सुव्यवस्थित करना चाहिए।
