जलजीरा मसाला

जलजीरा मसाला पानीपूरी मसाला के समान ही होता हैं। इसमें लाल मिर्च पाउडर , अमचुर, टाटरी नहीं होता हैं। इसलिए यह पेट दर्द या पेट में वायु प्रकोप होने पर औषधि के रुप में भी प्रयोग किया जाता हैं। पेट दर्द आदि में इसे नींबू के रस के साथ जल में घोलकर पीने से तुरन्त लाभ होता हैं। इसके अतिरिक्त इसके अन्य प्रयोग भी हैं।

मीठी शिकंजी बनाना – ताजे जल में जलजीरा मसाला , शक्कर , और नींबू का रस मिलाने से स्वादिष्ट शिकंजी बनती हैं। यह शिंकजी पेट के लिए बहुत लाभकारी होती हैं। इसका प्रयोग ग्रीष्म ऋतु में अवश्य करना चाहिए। यह शरबत शरीर को ताजगी और ताकत देता है। पतले दस्ते में भी इसके प्रयोग से लाभ होता है। यह लू से भी बचाता है। नींबू के स्थान पर आप इसमें पतली मथी हुई दही भी प्रयुक्त कर सकते है। ग्रीष्म काल में तरबूज के शरबत में जलजीरा मसाला मिलाकर पीने से शरबत बहुत स्वादिष्ट लगता हैं। इसके अतिरिक्त दही के लस्सी में भी इसको प्रयोग कर सकते हैं। उपर्युक्त पेयों में आप बर्फ का प्रयोग कर सकते है। परन्तु ध्यान रहे बर्फ पेट के लिए हानिकारक हैं। इसलिए इससे बचना चाहिए। घड़े का पानी प्रयोग करना चाहिए।


आलू भरा पराठा – आलू उबालकर बारीक पीस कर उसमें जलजीरा मसाला , हरी धनियाँ की पत्ती , हरी मिर्च और लहसुन का पेस्ट आपास में मिलाकर आटे में भरकर पराठा बनायें यह पराठा बहुत ही स्वादिष्ट होता हैं। कच्चे आम का छिलका छीलकर , उन्हें पीसकर उसमें जलजीरा मसाला मिला दीजिए। यह खटृटी चटनी बनती है। इसका रायता मसाला और चाट मसाला के रुप में भी प्रयोग होता हैं। इसे पानीपूरी मसाला बनाने के लिए इसमें अमचुर , टाटरी या नींबू का रस ,लाल मिर्च पाउडर के साथ मिला दीजिए।

प्रयुक्त सामग्री – जीरा , लौंग, सौफ, हींग , पुदीना पाउडर, सेंधा नमक , काला नमक आदि। इन सबका गुण खड़ा मसाला प्रकरण में देखें।
