आम Anaacardiaceae वर्ग का पौधा है। जिसका वानस्पतिक नाम मैगिफेरा इंडिका लिन है। आम को संस्कृत में आम्रफलम् और हिंदी में आम कहते हैं।अंग्रेजी में इसे Mango कहते हैं।आम के वृक्ष समस्त भारतवर्ष में पाए जाते हैं। कच्चे आम के अचार बनते हैं, जबकि पके आम फल के रूप में खाये जाते हैं। दोनों ही बड़े चाव से खाए जाते हैं।

आयुर्वेद के मतानुसार कच्चा आम अग्निवर्धक, मलरोधक, त्रिदोषवर्धक, कंठ और व्रण रोग मे हितकारी है। कच्चेआम का सेवन शरीर में पानी की कमी नहीं होने देता है एवं यह लू (भारत और उसके आसपास के देशों में ग्रीष्म ऋतु में चलने वाली गर्म हवा) से बचाता है।कच्चे आम में प्रोटीन,विटामिन ए,सी,ई कैल्शियम, मैग्नीशियम, फास्फोरस, ओमेगा 3 एवं फाइबर पाया जाता है। यह Antioxidant से भरपूर होता है।

आम के अनेक प्रकार के अचार बनते हैं,जैसे आम का तेल वाला अचार,आम का भरवा अचार,आम का हींग का अचार एवं मीठा आम का अचार।हमारे यहाँ ‘ रामकेला ’ प्रजाति के कच्चे आम का अचार बनता है। यह प्रजाति अचार के लिए सर्वोत्तम होती है। यह आम दलदार, खट्टा एंव बहुत स्वादिष्ट होता है। दीर्घकाल तक अपने रंग- रूप और स्वाद आदि को सुरक्षित रखना इसका गुण है। बाहर से देखने पर यह गोल, गाढ़े हरे (काही) रंग का होता है। जिस पर धानी रंग कीे छोटी-छोटी बहुत महीन बिंदुये पड़ी होती है। यह आम महँगा होता है और ग्रीष्म ऋतु के अन्त मे एंव वर्षा ऋतु के प्रारंभ मे मिलता है। मैंने इसे दिल्ली के आजादपुर (सब्जी मंडी) में भाद्रपद मांस के अंतिम सप्ताह (सितंबर माह का प्रथम सप्ताह) में बिकते हुए देखा है। रामकेला आम का अचार बहुत स्वादिष्ट होता है।
