भुजिया मसाला वास्तव में गरम मसाले का ही एक रूप है। गरम मसाले में धनिया नहीं मिला रहता है, जबकि भुजिया मसाले में धनिया भी मिला रहता है। साथ ही यह भुना हुआ भी रहता है,इसलिए इसे भुजिया मसाला कहते हैं। चूकी आलू झंलकारते समय इसे भी आलू के साथ झलकार जाता है, इसलिए इसे झलकारा मसाला भी कहते हैं। इसे व्रत में विशेष रूप से खाया जाता है।

भुजिया मसाले को उबले हुए आलू में हरी धनिया की पत्ती के साथ मिलाकर खाने से यह बहुत स्वादिष्ट लगता है। इसमें आप सेंधा नमक भी मिला सकते हैं।आलू छौकते समय भी इसका प्रयोग होता है। व्रत में साबूदाने या कूटू की दलिया की खिचड़ी में भी इसे खाया जाता है।

इसके अतिरिक्त यह चाट, आलू भरे पराठे और समोसे में भी प्रयुक्त होता है।
