भोजन सम्बन्धी आवश्यक नियम
  1. भोजन सदैव ताजा, सुपाच्य, मधुर, हल्का और चिकनाईयुक्त होना चाहिए। यह आयु, बुद्धि, बल, निरोगता, सुख और प्रीति को बढ़ाने वाला होता है। कहा गया है कि जैसा अन्न वैसा मन।
  2. नाश्ता और भोजन एक निश्चित समय पर ही करना चाहिए। इससे उस समय विशेष पर स्वयं ही भूख लगने लगती है और स्वास्थ्य उन्नत रहता है।
  3. सदैव खुल कर भूख लगने पर ही भोजन करना चाहिए। यदि भूख नहीं लगी है तो नाश्ता और भोजन का समय होने पर भी कुछ खाना नहीं चाहिए। हाँ, उस समय आप ताजे पानी में नीबू का रस मिला कर पी सकते हैं।
  4. भूख से सदैव एक रोटी कम खानी चाहिए। इससे हमारा पाचन तंत्र हमेशा शक्तिशाली बना रहता है। भोजन करने पर शरीर की सारी शक्ति खिच कर भोजन पचाने में लग जाती है। इसी तरह अधिक भोजन करने पर हमारा शरीर भारी और आलस्य युक्त हो जाता है। भूख से कम खाने पर यह सब उपद्रव नहीं होते हैं। इसीलिये बुद्धिमानों ने कहा है कि –
    ” कम खाना और खूब चबाना।
    यही है तंदुरुस्ती का खजाना। ”
  5. भोजन सदैव ऋतु; (मौसम)के अनुसार करना चाहिए। ग्रीष्मकाल में खीरा, ककड़ी, पुदीना, नीबू, आँवला, सौंफ, पोस्ता, ताजी दही, घड़े या हैण्डपम्प का ठण्डा जल जैसे ठण्डे पदार्थों का सेवन करना चायये। साथ ही जौ युक्त गेहूँ की रोटी खानी चाहिए। इसी प्रकार जाड़े के दिनों में सूखे मेवे, तेल, घी, लहसुन, अश्वगंध जैसे गर्म पदार्थाें का सेवन करना चाहिए। महर्षि चरक ने एक बार चिड़ियों की बोली में पूछा “कोरुक,कोरुक,कोरुक” अर्थात संसार मे स्वस्थ कौन है? उत्तर मिला ” हितभुक्, मितभुक्, ऋतुभक् ” अर्थात जो हितकारी भोजन करता है, कम खाता है और ऋतु के अनुसार खाता है वही स्वस्थ्य रहता है।
     
  6. एक साथ अनेक पदार्थों को नहीं खाना चाहिए। अधिक से अधिक दाल, चावल, रोटी, सब्जी और सलाद ही खाना चाहिए। अब इसके साथ पूडी, कचौड़ी, मिठाई आदि नाना प्रकार के पकवान लेने पर पाचन में बहुत कठिनाई होती है। आप स्वयं अनुभव करें कि केवल सब्जी-रोटी खाने पर थोडी ही देर मेें भूख लग जाती है जबकि दाल, चावल, सब्जी, रोटी, घी आदि पूर्ण भोजन लेने पर भूख लगने में कुछ अधिक समय लगता है। वहीं दस-बारह प्रकार के व्यंजन लेने पर दिन भर भूख नहीं लगती है साथ ही पेट में वायु विकार और खट्टी-खट्टी डकारें भी आतीं हैं। क्यांके इन विभिन्न प्रकार के व्यंजनो का रस, वीर्य और विपाक अलग-अलग होता हैं, जिससे पेट को पाचन क्रिया संपादित करें में अत्यधिक श्रम करना पड़ता है। इसलिए भोजन में कम से कम वैराइटी ही लेना चाहिए। भोजन उतना ही ले जितना आप आराम से खा सके। प्लेट मे जूठा छोड़कर अन्न का अनादर नहीं करना चाहिए।जूठा छोड़ने से अन्न का अपमान होता है।
  7. भोजन खूब चबा कर करना चाहिए। कहा गया है कि मुंह में जितने दाँत होते हैं उतनी बार अर्थात बत्तीस बार एक ग्रास को चबाना चाहिए। इससे आपका भोजन लार में भली-भाँति मिल जाता है और अमाश्य को भोजन के टुकड़े करने का कार्य नहीं करना पड़ता है।
  8. दोपहर के भोजन के पश्चात आधा घण्टा आराम करना चाहिए ताकि पाचन उचित प्रकार से हो सके। ग्रीष्मकाल में यदि सम्भव हो तो दोपहर में आधा घण्टे सो जाना चाहिए। लेकिन रात्रिकालीनभोजनोपरान्त कम से कम आधा घण्टा मन्द गति से टहलना चाहिए।
  9. जैसे भोजन निश्चित समय पर करना चाहिए वैसे ही जल भी निश्चित समय पर करना चाहिए। जल पीने में कभी भी आलस्य नहीं करना चाहिए। जैसे हमारी पृथ्वी पर 70 प्रतिशत जल है, ठीक उसी प्रकार हमारे शरीर में भी 70 प्रतिजन जल है। रक्त, प्लाज्मा, कफ आदि जल के ही रूप हैं। जल अधिक पीने से गुर्दा साफ होता रहता है और वह रोग रहित रहता है। जिससे खून भी साफ होता रहता है और हम निरोग बने रहते हैं।
  10. पानी सदैव स्वच्छ ही पीना चाहिए। हैण्डपम्प, ट्यूबबेल का पानी या फिल्टर वाटर लेना चाहिए। पानी की स्वच्छता के सम्बन्ध में यदि शंका है तो पानी खूब उबाल कर, ठण्डा करके पीना चाहिए। यदि कब्ज रहता है तो व्यायाम और भोजन सुधार आदि के साथ-साथ रात्रि को ताँबे के बर्तन में रखा हुआ पानी प्रात: सो कर उठने पर पीना चाहिए। जाड़ों में गुनगुना पानी और गर्मी में हैण्डपम्प या घड़े का पानी पीना चाहिए। फ्रिज का ठण्डा पानी, बर्फ, सोडा वाटर, कोकोकोल, फालूदा जैसे ठण्डे पेयों से कोसौ दूर रहना चाहिए। यह सब पेट की गर्मी बढ़ाने वाले और रोग उत्पन्न करने वाले होते हैं।
  11. तरल पदार्थ जैसे दूध, मट्ठा या जल पीना भी एक कला है। तरल पदार्थ का एक घूंट मुंह में लें और मुह बन्द करके कुल्ला जैसा करें और पी जायें। इससे मुँह का लार उस तरल पदार्थ में मिल जाता है और पाचन शीघ्र होता है। आपने अनुभव किया होगा कि चुल्लू से पानी पीने पर या प्लेट में पानी पीने पर पानी अधिक मीठा लगता है क्योकि चुल्लू या थाली से पानी पीने पर हम उस जल को मुँह से खींच कर पीते हैं। जिससे हमारी लार ग्रंथियों पर दबाव और खिंचाव पड़ता है और लार तेजी से निकलने लगता है जिससे वह पानी के साथ मिलकर मीठा लगता है साथ ही पाचक भी होता है।
  12. जहाँ तक सम्भव हो नाश्ता या भोजन करते समय बीच पानी नहीं पीना चाहिए। अत्यधिक आवश्यक होने पर भोजन के बीच में एक या दो घूँट पानी पिया हो सकता है। भोजन के आधे घण्टे पहले और भोजन के एक घण्टे पश्चात आप भरपेट पानी पी सकते हैं। भोजन के बीच में पानी पीने से लार पतली हो जाती है इससे खाद्य पदार्थ के पचने में कठिनाई होती है। भोजन भी सादा ही लेना चाहिए। यदि भोजन मिर्च-मसालेे युक्त है तो आपको पानी अधिक पीना पड़ेगा जो कि पाचन पर विपरीत प्रभाव डालता है। अधिक मसाले ऑतोको अप्राकृतिक रूप से उत्तेजित करते हैं, जो पाचन के लिए हानिकारक सिद्व होते हैं। प्रतिदिन चार से पांच लीटर पानी पीना चाहिए।
  13. सप्ताह मेें एक दिन का उपवास अवश्य करना चाहिए। इस दिन केवल फल का रस या सम्भव हो सके तो केवल पानी पीकर ही रहना चाहिए। व्रत में जठराग्नि आपके शरीर के विकारों को जलाती है। इससे आपके शरीर के आन्तरिक अंगों की सफाई हो जाती है और उन्हें आराम भी मिलता है फलस्वरूप उनमें नवीन चेतना का संचार होता है।
  14. बीमार पड़ने पर लोग डॉक्टर के यहाँ जाते हैं तो डॉँक्टर उन्हें दवा देते हैं साथ ही परहेज भी बताते हैं। यदि रोगी परहेज नहीं करता है तो उसे लाभ नहीं होता है। वहीं रोगी दवा न करके केवल परहेज करे तो वह ठीक हो जाता है। इससे निष्कर्ष निकलता है कि दवा और परहेज में,परहेज श्रेष्ठ है। दवा आदि गौण है। इसलिए मनुष्य को अपने आहार-विहार पर विशेष ध्यान देना चाहिए।
  15. खूब कड़ी भूख लगने पर ही भोजन भोजन करें। सदैव प्राकृतिक, शुद्ध, सुपाचाय एंव अपने अनूकूल पड़ने वाला खाद्य ग्रहण करे। भूख से एक रोटी कम खाये। इस प्रकार कब खाये, क्या खाये और कितना खाये इसका सदैव ध्यान रखें।
  16. भोजन सदैव निश्चित समय पर भोजन करना चाहिए। निश्चित समय होने पर भी यदि भूख नहीं लगी तो कुछ मत खाये। स्वस्थ रहने का यह सबसे बड़ा नियम है।
  17. वे सभी खाद्य जो हमे किसी जीवित प्राणी के द्वारा मिलते हैं उनमे कई प्रकार के हारमोंस, अमीनो एसिड और एन्जाइमस की मात्रा अधिक होती है। इसलिए सही समय पर, सही खाद्य के साथ भोजन आवश्यक होता है। भोजन मे फर्मोटिक खाद्यो और पशुओ से मिलने वाली खाद्य पदार्थो मे रासायनिक प्रतिक्रिया का गुण अधिक होता है। इसलिए इनके खाने पर विशेष ध्यान देना चाहिए। विधि-विरूद्ध भोजन करने से शरीर की धातु दूषित हो जाती है, जिससे कई प्रकार के रोग उत्पन्न होते हैं। आयुर्वेद मेे इसका विशेष रूप से वर्णन किया गया है। लेकिन उनमें जो प्रमुख है वह निम्नलिखित है-
  18. दूध के साथ मछली या मांस कभी नहीं खाना चाहिए। इससे रक्त दूषित हो जाता है। इसी प्रकार की मछली के साथ गन्ने का रस, शहद और जल के किनारे रहने वाले पक्षियो का मांस नहीं खाना चाहिए।
  19. कभी भी बकरा, सुवर, कछुआ, मछली आदि का मांस, शहद, गुड़, दूध, उरद और मूली आदि एक साथ मिलाकर नहीं खाना चाहिए। इससे अंधापन, बहरापन, नासमझी, जड़ता और यहा तक की मृत्यु भी हो सकती है।
  20. मूली, लहसुन, सहजन, शाक आदि खाकर दूध पीने से कोढ़ पैदा हो सकता है।
  21. कटहल के साथ दूध पीना मना है। इसी प्रकार कटहल खाने के बाद पान खाना भी वर्जित है।
  22. खीर या पनीर के साथ मट्ठा नहीं लेना चाहिए। भोजन के साथ भी मट्ठा नहीं लेना चाहिए इससे पाचन में कठि नाई होती है।
  23. शहद और घी समभाग कभी नहीं खाना चाहिए। शहद को पका कर भी नहीं खाना चाहिए। इससे मृत्यु भी हो सकती है।
